Pulenaz: a shared supper with choices at the table

Pulenaz builds a campsite supper around a large bowl of couscous. She heats water on a portable stove and pours it over the couscous, then cooks sliced peppers and zucchini in a pan. Chickpeas, lemon and herbed yogurt go onto the table alongside the vegetables, so the campers can put together their own bowls.

As they serve, Pulenaz asks what everyone wants and passes the dishes around, adding more lemon to her own bowl after tasting it. The conversation continues while she tops up the vegetables and sits down with the group. Her account follows the meal from stove to table, making the small choices and shared serving as much a part of the evening as the cooking.

Kathryn Frazer: a kitchen that travels in the car

Kathryn Frazer follows four campers over a four-day, three-night trip. Her kitchen load is a portable stove, a pot, a pan and a small utensil box with a knife and serving tools. Plates, food and water travel separately. She takes the kit out of the car at camp and packs it back into its box after cooking.

The small kit keeps the cooking equipment together and leaves room in the car for the rest of the trip. It also determines the order of work: Kathryn groups ingredients before cooking and uses the pot and pan in turn rather than laying out a kitchen full of appliances. On the first evening she warms vegetables in the pan and puts beans and toppings on the table for tacos.

Three evenings, different dinners

The campers assemble their own tacos on the first night, choosing from bowls of beans, vegetables and toppings. The next evening Kathryn uses the pot for pasta with tomato and lentil sauce; the campers add toppings and compare combinations at the table.

For the third dinner she uses the pan for a rice and vegetable skillet. The same compact equipment serves three meals with different foundations and ways of eating: hand-filled tacos, sauced pasta and a shared skillet. Reusing vegetables while changing their preparation keeps the menu varied without requiring a separate appliance for each dinner.
